Ingredients

  • 2 cups tomatoes, diced
  • 1 cup cucumber, peeled and diced
  • 1 bunch fresh cilantro, chopped
  • ½ small red onion, diced
  • 1 lime, juiced
  • A few leaves of fresh chopped mint (or pinch of dried mint) (optional)
  • ¼ tsp salt (optional)

Directions

  1. Mix all the ingredients together in a bowl and serve 1/2 cup to each child.

One serving provides 1/2 cup vegetable.
