On Monday, our rainbow food color of choice was green, and our choice of snacks were kiwis and honeydew melons.
On Tuesday, we prepared baked fish to have during lunch time. The colors of our meal choices are also reflecting your theme of Eating the Rainbow. After enjoying the meal, staff also provided training and discussed with them the importance of eating healthy while they also worked on completing the CACFP activity worksheets that were provided.
We also served Herry's Blueberry Lemon Parfait, but we also incorporated other yogurt flavors as well with the lemon and blueberry such as strawberry and peach. This was a snack that was also chosen from the sample menu. It only required three ingredients that are also healthy choices. Some of the colors featured in our snack that matches the Eating The Rainbow theme are, yellow, orange, and blue. Everyone has enjoyed celebrating CACFP Week.
Lastly, my team and I made Pizza Kebabs. This recipe was selected from your sample menu on the web. The ingredients needed were Kebab sticks, cherry tomatoes, wheat pita bread, strings mozzarella cheese, and marinara sauce. Some of the rainbow colors featured in our recipe were red and yellow. We really did enjoy ourselves this week and having the opportunity to participate in the CACFP week activities.
