- 2 cups tomatoes, diced
- 1 cup cucumber, peeled and diced
- 1 bunch fresh cilantro, chopped
- ½ small red onion, diced
- 1 lime, juiced
- A few leaves of fresh chopped mint (or pinch of dried mint) (optional)
- ¼ tsp salt (optional)
- Mix all the ingredients together in a bowl and serve 1/2 cup to each child.
One serving provides 1/2 cup vegetable.
