Ingredients

  • 3 cups cooked brown lentils
  • 2 large eggs
  • 1/2 tsp garlic powder
  • 2 tbsp Italian seasoning
  • 1/2 medium onion, chopped
  • 1 1/2 cups whole wheat breadcrumbs
  • 3 cups marinara sauce
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Directions

  1. In a food processor, add lentils, eggs, garlic powder, Italian seasoning, onion, breadcrumbs, salt and pepper.
  2. Blend ingredients together until the mixture looks smooth.
  3. Scoop 2 tablespoons of mix and roll into a ball. Repeat until 36 lentil balls are made.
  4. In a large skillet, heat oil over medium-low heat.
  5. Add all lentil balls into the skillet and cook for 10 minutes on each side.
  6. Pour 3 cups of marinara in the skillet and cover. Allow to cook for 5 minutes.
