- 1.5 lbs chicken breast, 1" cubes
- 2 cups butternut squash, 1/2" cubes
- 2 cups small broccoli florets
- 1/2 medium onion, sliced
- 3 tbsp olive oil
- Seasonings to taste
- In a large bowl, toss vegetables and chicken with olive oil and seasonings of your choice.
- Place on a baking sheet and cook at 450° F for 20 minutes.
